Ingredients

  1. In a bowl, combine seasoning, 2 tablespoons of olive oil, and 1 teaspoon of salt.
  2. Coat the chicken thighs with this marinade and let them sit at room temperature while you prepare the other ingredients.
  3. Preheat the oven to 200°C fan forced.
  4. Preheat a barbecue or grill plate.
  5. Cut the sweet potatoes into 2 cm thick wedges.
  6. Toss them with a tablespoon of olive oil and season with salt.
  7. Place them on a shallow tray and roast in the preheated oven for 25 to 30 minutes or until they are crispy on the corners and soft in the middle.
  8. Grill the marinated chicken thighs for about 7 minutes per side or until they are cooked through.
  9. Place the cooked chicken on a clean tray, cover it with foil, and let it rest.
  10. In a large bowl, combine the finely shaved cabbage, chopped coriander leaves, chopped spring green onions, and pickled carrots.
  11. Drizzle with lime juice and oil, season w salt and toss well.
