Egg Bacon & Cheese Jaffle

Ingredients

Instructions

  1. Whisk the eggs and milk together in a large shallow dish - ideally holding the 4 slices of bread in a single layer at time.
  2. Butter the outside of the bread slices. Place the bread, buttered side up into the egg mixture and let it soak until completely absorbed.
  3. Meanwhile, fry the bacon in a pan until crispy.
  4. Combine the chopped bacon, grated cheese, and tomato relish in a bowl. Season with salt and pepper.
  5. Heat the jaffle maker. Place two slices of the soaked bread, buttered side down, into the hot jaffle maker.
  6. Fill each slice with the bacon, cheese, and relish mixture.
  7. Place the other two slices of bread on top, buttered side up.
  8. Close the jaffle maker and cook until golden and crispy.

Hints

Use a combination of cheeses, such as cheddar and mozzarella, for a gooey filling.

You can double this, but because the process involves soaking the bread in egg beforetoasting, it’s easier in smaller batches!
