Halloumi Chicken Burger

INGREDIENTS

serves 4

PATTY

500 g chicken mince

1 cup grated halloumi

1 tsP sea salt

1 TBSP dried oregano

zest of one lemon

2 TBSP rustic homemade breadcrumbs

2 tbsP tuom


Method

combine everything and make 4 even patties.

on medium heat, pan fry in a non-stick pan till golden (or take it outside and do it on the flat grill).

Eat on fresh crusty rolls taking herb addition influence from a Vietnamese Bahn mi but using Greekish flavours:

  • Picked Dill, mint and oregano

  • Lettuce

  • Slices of cucumber and tomato

  • Minty blitzed yogurt (1/2 cup greek yoghurt, 12 mint leaves, blended till smooth, then combined with 1 cup of greek yoghurt using a spoon to stir.  season well)

  • and then of course, whatever chilli you like… if you like!!
