One Word. DIY. well 3 I suppose. It’s mince and rice and lettuce cup heaven. I urge you to believe… if they make it they will eat it. And yes… assembly = make, we live in IKEA country.

  1. In a frying pan, spread 800g pork mince, mashing it to the edges like a burger patty. Cook until browned and crispy.
  2. In an oven-proof dish, combine ghee, coconut, fried shallots, rice and stock. Bake uncovered in a 180°C fan-forced oven until rice is absorbed, resulting in perfectly chewy rice with a crispy edge. About 25mins.
  3. While the rice is baking, blend onion, garlic, lime leaves, and salt. Add this mixture to the browning pork, stirring until fragrant and almost cooked through.
  4. Break up any meat clumps with a whisk. Add brown sugar, cook until caramelized (about 3 minutes), then add fish sauce, lime juice, chopped water chestnuts, and finely chopped bok choy. Combine until mixed, then turn off heat.
  5. Rinse lettuce leaves and coriander. Serve the coconut chewy rice and pork stir-fry in lettuce leaves, garnished with fresh coriander. Add chilli and extra lime wedges on the side for extra flavor.
