- In a frying pan, spread 800g pork mince, mashing it to the edges like a burger patty. Cook until browned and crispy.
- In an oven-proof dish, combine ghee, coconut, fried shallots, rice and stock. Bake uncovered in a 180°C fan-forced oven until rice is absorbed, resulting in perfectly chewy rice with a crispy edge. About 25mins.
- While the rice is baking, blend onion, garlic, lime leaves, and salt. Add this mixture to the browning pork, stirring until fragrant and almost cooked through.
- Break up any meat clumps with a whisk. Add brown sugar, cook until caramelized (about 3 minutes), then add fish sauce, lime juice, chopped water chestnuts, and finely chopped bok choy. Combine until mixed, then turn off heat.
- Rinse lettuce leaves and coriander. Serve the coconut chewy rice and pork stir-fry in lettuce leaves, garnished with fresh coriander. Add chilli and extra lime wedges on the side for extra flavor.
