Lazy B’fast Tacos

 

INGREDIENTS

for 1 or 4 people

1 tbsp olive oil (for 4 people: increase to 2)

1 garlic clove, finely chopped (for 4 people: increase to 3)

125 g can of corn, drained (about ½ c) (for 4 people: increase to 1½ cups)

4-5 sliced pickled jalapenos, finely chopped (for 4 people: increase to ¼ cup)

1 tbsp finely chopped coriander stalks, leaves reserved for garnish (for 4 people: increase to ¼ cup)

2 eggs (for 4 people: increase to 9)

¼ cup grated cheddar cheese (for 4 people: increase to 1 cup)

Cos lettuce, coriander sprigs and tabasco to eat with

Method

Heat the oil in a frying pan over medium heat. 

Add the garlic and saute for 5 mins until beginning to golden. 

Add the corn to cool down the pan a dit and saute for a further 2 mins. 

Season well at this point.

Add in the coriander stems and jalapenos and stir well. 

This is where it all gets very lazy. 

Crack the eggs straight into the pan, breaking each yolk as you do and encourage it to spill around the other ingredients evenly. 

Turn the heat to low and sprinkle the whole thing evenly with cheese. 

Cover with a loose fitting lid and allow it to steam fry for 2 mins. 

The cheese should be soft and melted and the eggs just done. 

Drizzle with tabasco and scoop into lettuce cups with coriander to eat. 

Corn chips would be an ideal addition/scooper also.
