E4: Better Steak n Mash

 

INGREDIENTS

2 350g New York strip steaks, at room temperature

1 garlic clove, crushed

Half bunch of oregano, leaves picked

1 tbs olive oil

Zest of 1 lemon

1kg Dutch cream potatoes, peeled and quartered

⅓ cup Greek yoghurt

1 tbsP wholegrain mustard

1 cup frozen peas

75g butter

Salt and pepper

method

For the mash, cook the potatoes in a large pot of boiling salted water for 15mins or until very soft.

Heat a cast iron pan / grill pan / frying pan over high heat. Salt steaks and massage with oil. Cook steaks for 4-5mins each side for medium rare.

Finely chop oregano with garlic and spread over chopping board. Add lemon zest and season with salt. Rest steak for 5mins on bed of seasoned oregano.

Add peas to potatoes for 1min and drain. Return potatoes and peas to pot. Add butter, yoghurt and mustard and mash. Season with salt and pepper.

Thickly slice steaks and serve with mash.
