  1. Mix the flour, chicken stock powder, garlic powder, onion powder, and a pinch of salt on a plate. Coat each chicken thigh in the seasoned flour, dip in the beaten egg, then coat in the panko breadcrumbs mixed with sesame seeds.
  2. Heat olive oil in a pan over medium heat. Cook the chicken thighs for 3-4 minutes on each side until golden brown and cooked through.
  3. Meanwhile, heat a separate pan or grill to high heat and quickly char the shaved broccoli for 2-3 minutes until lightly browned but still crisp.
  4. In a large bowl, combine carrot, cabbage, bok choy, cucumber, and spring onions. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, and honey. Pour the dressing over the vegetables and toss to combine.
  5. Serve the sesame-crusted chicken thighs alongside the Asian slaw and charred broccoli.

Notes

Try adding chilli flakes to the panko for extra flavour.

Pound the chicken thighs evenly to ensure they cook at the same rate.

The slaw can be prepped in advance and refrigerated until ready to serve.
