METHOD
  1. Preheat the oven to 200°C fan forced and line a baking tray with baking paper.
  2. Cut two cheeks off the apple, remove the core, and slice each cheek finely. Slice the remaining edges of the apple finely as well.
  3. Place the sliced apple in a bowl with the lemon zest, caster sugar, and vanilla extract. Toss well to coat.
  4. Lay the puff pastry sheet on the prepared baking tray, and brush the egg wash mixture around the sides.
  5. Arrange the apple slices in overlapping layers onto the puff pastry, leaving the 1 cm border.
  6. Dot the apple slices with the thinly sliced butter and dollop the jam over the top.
  7. Bake in the preheated oven for 15 minutes, or until the edges are golden and puffy.
  8. Remove from the oven and allow to cool slightly before serving.

TIPS N TRICKS

Use a mandoline to get even, thin slices of apple for a more refined tart.

Experiment with different types of jam to change up the flavour profile.

Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
