Instructions
- In a large frying pan with a tight-fitting lid, sauté chopped brown onion and sliced zucchini in 2 tablespoons of olive oil. Add fresh oregano leaves and a sprinkle of water. Cover and cook until very soft and golden, about 15-20 minutes.
- Boil the large pasta shells insalted water until al dente.
- Add a tablespoon of butter to the zucchini mixture, then toss in the cooked pasta shells. Stir well.
- Sprinkle in 250g of grated Parmesan cheese and add some pasta water. Continue stirring until the sauce is emulsified.
- Season with salt and pepper to taste.
- Serve with an extra sprinkle of Parmesan cheese.
