  1. In a large frying pan with a tight-fitting lid, sauté chopped brown onion and sliced zucchini in 2 tablespoons of olive oil. Add fresh oregano leaves and a sprinkle of water. Cover and cook until very soft and golden, about 15-20 minutes.
  2. Boil the large pasta shells insalted water until al dente.
  3. Add a tablespoon of butter to the zucchini mixture, then toss in the cooked pasta shells. Stir well.
  4. Sprinkle in 250g of grated Parmesan cheese and add some pasta water. Continue stirring until the sauce is emulsified.
  5. Season with salt and pepper to taste.
  6. Serve with an extra sprinkle of Parmesan cheese.
