  1. Chop the onion, carrots, celery, pumpkin, and beetroot into small pieces.
  2. Heat a large pot over medium heat and add a splash of oil. Sauté the chopped vegetables and garlic until they start to soften.
  3. Add the canned tomatoes, oregano, thyme, basil butter, Parmesan rind, and water to the pot. Stir well to combine.
  4. Cover the pot and let the sauce simmer for 20-30 minutes, or until the vegetables are soft.
  5. Once the vegetables are soft, remove the Parmesan rind from the sauce.
  6. Use a blender (stick) to blend the sauce until smooth. Be careful when blending hot liquids.
  7. This will make a lot! Remove about ½ - ¾ into jars for another day*
  8. If using, stir in a dollop of cream to add richness to the sauce.
  9. Cook the pasta according to the package instructions until al dente. Reserve some pasta water before draining.
  10. Add the cooked pasta and a splash of pasta water to the sauce. Stir well to combine.
  11. Serve the pasta sauce hot, topped with freshly ground black pepper and a sprinkle of grated Parmesan cheese.

TIPS N TRICKS

This sauce is excellent as a soup, a pizza topping, a lasagne sauce, braising meats in… etc! Keep for a week in the fridge of freeze in smaller batches for an instant vege hit!

For extra flavor, roast the vegetables in the oven before adding them to the sauce.

Experiment with different herbs and spices (curry powder and coconut cream!!) to customize the flavor of the sauce to your liking.

Don't skip blending the sauce for a smooth and creamy texture. It makes all the difference!
