  1. Season the flank steak generously with salt and Old Bay seasoning mix on all sides. Allow it to come to room temperature while preheating the barbecue to very hot.
  2. Grill the steak on both sides for 5 to 7 minutes until it's charred on the outside but still rare on the inside. Set it aside to rest.
  3. In a small food chopper, combine the chopped tomatoes, spring onion, coriander stalks, sea salt, olive oil, and vinegar. Blitz until you achieve a chunky yet mushy consistency. Set aside.
  4. Slice the avocados and season them with lime juice and Tajin chili powder.
  5. Preheat the taco shells in a pan or over a naked flame, flipping to char each side slightly.
  6. Assemble the tacos by topping each shell with cheese, sour cream, shredded lettuce, sliced onion, flank steak, avocado slices, tomato salsa, and desired chili.
  7. Serve immediately and enjoy!
