Instructions
- Season the flank steak generously with salt and Old Bay seasoning mix on all sides. Allow it to come to room temperature while preheating the barbecue to very hot.
- Grill the steak on both sides for 5 to 7 minutes until it's charred on the outside but still rare on the inside. Set it aside to rest.
- In a small food chopper, combine the chopped tomatoes, spring onion, coriander stalks, sea salt, olive oil, and vinegar. Blitz until you achieve a chunky yet mushy consistency. Set aside.
- Slice the avocados and season them with lime juice and Tajin chili powder.
- Preheat the taco shells in a pan or over a naked flame, flipping to char each side slightly.
- Assemble the tacos by topping each shell with cheese, sour cream, shredded lettuce, sliced onion, flank steak, avocado slices, tomato salsa, and desired chili.
- Serve immediately and enjoy!
