Instructions

  1. In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add crushed garlic to the pan and cook for 1 minute until fragrant.
  3. Add thawed prawns to the pan and sear for 1-2 minutes on each side until they turn pink and opaque. Just flip them once to seal the other side. Remove from the pan and set aside.
  4. In the same pan, add the remaining tablespoon of olive oil and lemon juice. Stir to combine, scraping up any bits of garlic.
  5. In a large salad bowl, combine the chopped avocado with the lemon-garlic-oil mixture from the pan. Toss gently to coat.
  6. Add shredded lettuce to the bowl and toss with the avocado mixture.
  7. Arrange the garlic prawns on top of the salad.
  8. Sprinkle chopped chives over the salad.
  9. Drizzle spicy mayo over the top, according to taste.
