Instructions
- In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat.
- Add crushed garlic to the pan and cook for 1 minute until fragrant.
- Add thawed prawns to the pan and sear for 1-2 minutes on each side until they turn pink and opaque. Just flip them once to seal the other side. Remove from the pan and set aside.
- In the same pan, add the remaining tablespoon of olive oil and lemon juice. Stir to combine, scraping up any bits of garlic.
- In a large salad bowl, combine the chopped avocado with the lemon-garlic-oil mixture from the pan. Toss gently to coat.
- Add shredded lettuce to the bowl and toss with the avocado mixture.
- Arrange the garlic prawns on top of the salad.
- Sprinkle chopped chives over the salad.
- Drizzle spicy mayo over the top, according to taste.
