Instructions

  1. Cook the short pasta in a large pot of salted boiling water according to the package instructions until it's almost al dente.
  2. Reserve 1/4 cup of pasta water, then drain the pasta one minute before it reaches al dente. In that same pot, melt the butter and add a tablespoon of olive oil over medium heat.
  3. Sauté the finely chopped garlic for about five minutes until it's just golden and fragrant.
  4. Add the chopped prawns to the pot and cook them, stirring occasionally, until they start to change color. This should take just a minutes.
  5. Add the Gochujang Korean chili paste into the pot with the prawns and garlic.
  6. Sauté everything together briefly for about a minute then add the pouring cream into the pot, Fold int the partially cooked pasta.
  7. And stir through the pasta water to emulsiphy the sauce.
  8. Add lemon zest and parmy to taste.
