  1. In a food processor or small blender, combine the lemongrass, garlic, chopped onion, powdered turmeric, lime zest, lime juice, sea salt, and olive oil. Blend until you achieve a smooth paste.
  2. Spread the paste evenly over the chicken, making sure they are well coated. Place the coated chicken in an airtight container and refrigerate overnight for marinating.
  3. Before grilling, take the marinated chicken out of the refrigerator and let it come to room temperature. This usually takes about an hour.
  4. Preheat the grill to high heat.
  5. Once the grill is hot, place the chicken on the grill, skin side up. Cook for approximately 15 minutes until the bottom side is well charred. The chicken should start to tighten across the skin and slightly change color.
  6. Carefully flip the chicken over to the other side and continue cooking until the internal temperature reaches 74 to 75°C (165 to 170°F). This can take around 30 to 45 minutes, depending on the size of the marylands.
  7. Once cooked, remove the chicken from the grill and allow it to rest for a few minutes.
  8. Serve the Lemongrass Turmeric Grilled Chicken with fresh cucumber slices, coriander, mint leaves, and steamed rice.
  9. Drizzle with ketchup manis and serve with lime wedges.
