We will grill till the sun goes down. Crunchy walnuts, crispy bruss leaves and a real tangy vinaigrette. This recipe sums up focus on the side!... the salad has all the good stuff, the meat is a wingman.

Ingredients

Salad Dressing

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice or wedge Brussels sprouts.
  3. In a bowl mix the lemon juice, garlic, honey, miso and oil
  4. Toss Brussels sprouts in the mixture.
  5. Roast in the hot oven until caramelized and golden. Remove and cool.
Crushed Walnuts
  1. Roast walnuts until golden and slightly oily.
  2. Cool, then crush to a textured consistency.
Salad Dressing
  1. In a Nutribullet, blend: lemon juice, garlic, mustard, honey, salt and olive oil
  2. Blend until emulsified to a creamy state.
Steak
  1. Season steaks with a mix of dry herbs and spices.
  2. Grill steaks to your preferred doneness.
  3. Let the steaks rest before slicing.
Assembly
  1. Arrange rocket leaves on plates.
  2. Place roasted Brussels sprouts on the leaves.
  3. Sprinkle crushed walnuts for texture.
  4. Slice and arrange grilled steak on top.
  5. Garnish with homegrown mustard sprouts.
  6. Drizzle the lemon-garlic-honey miso dressing over the entire dish.
