We will grill till the sun goes down. Crunchy walnuts, crispy bruss leaves and a real tangy vinaigrette. This recipe sums up focus on the side!... the salad has all the good stuff, the meat is a wingman.

Instructions
- Preheat the oven to 425°F (220°C).
- Slice or wedge Brussels sprouts.
- In a bowl mix the lemon juice, garlic, honey, miso and oil
- Toss Brussels sprouts in the mixture.
- Roast in the hot oven until caramelized and golden. Remove and cool.
Crushed Walnuts
- Roast walnuts until golden and slightly oily.
- Cool, then crush to a textured consistency.
Salad Dressing
- In a Nutribullet, blend: lemon juice, garlic, mustard, honey, salt and olive oil
- Blend until emulsified to a creamy state.
Steak
- Season steaks with a mix of dry herbs and spices.
- Grill steaks to your preferred doneness.
- Let the steaks rest before slicing.
Assembly
- Arrange rocket leaves on plates.
- Place roasted Brussels sprouts on the leaves.
- Sprinkle crushed walnuts for texture.
- Slice and arrange grilled steak on top.
- Garnish with homegrown mustard sprouts.
- Drizzle the lemon-garlic-honey miso dressing over the entire dish.
