Instructions

  1. Simmer broth with lemongrass, cinnamon, cloves, onion, garlic, ginger, peppercorns and turmeric for at least 30 minutes.
  2. Meanwhile, combine pork, water chestnuts, bok choy, cornflour, egg white, sesame oil, grated ginger, spring onions, and oyster sauce in a bowl. season with salt.
  3. Once broth is infused, strain out spices. Scoop dumpling-sized portions of pork mixture into simmering broth.
  4. cook dumplings on a very gentl simmer for 15 minutes until cooked through.
  5. Serve with reserved bok choy leaves and rice noodles.
