Sausage Rolls

INGREDIENTS
1 onion, sliced
2 ts olive oil
500 g pork and fennel sausages
250 g beef mince
1/2 cup onion jam
2 sheets store bought puff pastry
1 egg
Black or white (or mixed) sesame seeds
METHOD
Preheat oven to 180’c fan forced.
In a nonstick pan over medium heat, saute the onion and olive oil until softened and beginning to turn golden - about 7mins.
Remove from heat and set aside in a mixing bowl with the onion jam to cool slightly.
Remove sausage meat from the skin and place into the mixing bowl along with the beef mince.
Mix well with your hands or a wooden spoon.
Whisk the egg in a small bowl with a fork to make an egg wash.
Cut each sheet of pastry into 8 even squares.
Divide the meatmixture between the logs.
Brush one edge of the pastry with the egg wash. Roll each log into a rol and press gently to seal.
Place the sausage rolls onto a tray lined with baking paper.
Score the top of each log lightly with a knife, brush with the rmeaining eggwash and sprinkle with sesame seeds.
Bake for 30 minutes, until golden brown.
