Instructions

  1. Place the butter, anchovies, thyme, garlic, lemon and mustard int a small food processor and blend to combine.
  2. Roll the butter into a log and wrap tightly in glad wrap. Place in the fridge until ready to use.
  3. Allow steak to come to room temp, drizzle with oil and salt generously.
  4. Cook over med-high heat in a frying pan for 4mins a side (for medium rare).
  5. Set aside to rest for 4 mins in a warm place with a large disk of butter on it.
