- Until recently, Brussels sprouts have often suffered the unfortunate fate of being overcooked in boiling water, resulting in a mushy, unappealing texture that resembled something closer to an upset stomach than a delightful dish. However, their true charm emerges when they're prepared differently: roasted until they blister and crisp, coated in delightful sweet marinades and zesty spices, and served atop a creamy and tangy dressing that's thick enough to generously coat each sprout.
- Preheat your oven to 200°C (400°F) for fan-forced heating. Lightly grease a baking tray using 1 tablespoon of olive oil.
- Prepare the Brussels sprouts by trimming their bases and halving them. Some leaves might loosen, and that's alright – these will turn into crispy, delicious burnt edges during roasting.
- In a large bowl, mix together the garlic, miso paste, mustard, the remaining olive oil, and 2 tablespoons of maple syrup. Add the Brussels sprouts, including the loose leaves, and ensure they're thoroughly coated.
- Spread the coated Brussels sprouts onto the prepared baking tray and roast them for approximately 20 minutes, or until they turn charred and crispy. Allow them to cool slightly while you prepare the dressing.
- In a medium bowl, combine the tahini, yogurt, lemon juice, and the remaining maple syrup. Mix thoroughly.
- Scoop the tangy dressing into the center of a shallow serving bowl. Arrange the slightly cooled Brussels sprouts on top of the dressing and sprinkle them with sesame seeds or Everything Bagel Seasoning.
- For added enjoyment, this dish pairs excellently with a fried egg or atop a bowl of quinoa, providing a hearty option without meat.
