Dumpling rice, with dumplings

INGREDIENTS

2 c left over dumpling mince(yes you can sub out for plain pork mince, but this one has extra flavour!) see dumpling recipe here
2 tbs oil
3 garlic cloves, thinly sliced
3 spring onions/shallots, thinly sliced, whites and greens separated
4 drugs coriander, stems thinly sliced and leaves reserved for garnish
1 5cm knob of ginger, peeled and grated
1 c corn kernels, fresh or canned
1.5 c rice
3 c chicken stock
1 tbsp sesame oil
12 store bought asian style dumplings of any kind (or use the ones you may have made SAT, go nuts mate)
1 bunch of pak/bok choy, stems finely chopped and leafy ends kept whole or torn
Ketchup manis to serve


METHOD

Preheat oven to 200°C.

In a large oven-safe pot or Dutch oven, heat the oil over medium heat. Add the dumplings (from frozen is fine) and fry until at least one edge is dark golden - aout 5 mins. Remove and set aside. 

Ad the garlic and allow to crips to golden also… about 2 mins.

Add the leftover dumpling mince (or plain pork mince), white parts of the spring onions, sliced coriander stems, and grated ginger to the pot, allow to brown and then begin to break up for about 5 minutes. 

Stir in the corn kernels and rice, coating them well with the mixture in the pot.

Pour in the chicken stock and sesame oil. Stir everything together, making sure the rice is submerged in the liquid, then carefully arrange the dumplings on top of the rice mixture.

Transfer it, uncovered, to the preheated oven. Bake for 30 minutes.

While the dumplings are baking, prepare the pak/bok choy. Finely chop the stems and set aside. Keep the leafy ends whole or tear them into smaller pieces.

Take the pot out of the oven and place the pak/bok choy stems and leaves on top and cover with a lid and back in the oven to self steam for 10mins. 

Remove the pot from the oven and garnish with the reserved sliced spring onion greens and coriander leaves.

Serve the one-pot oven-baked dumpling mince rice with bok choy hot, and drizzle with ketchup manis for extra flavor if desired.
