If there is a real lesson in this one, it’s that batch stir-frying is the only way to go at home.

Instructions

  1. In a large container, combine all the marinade ingredients. This yields twice as much as needed. You can either store the extra in the fridge for later use (e.g., prawns, barbecued chicken, baked wings) or halve the quantities.
  2. Coat the beef with half of the marinade and marinate it overnight or for at least an hour. In a rush, 15 minutes of marination works well.
  3. Heat a splash of oil in a large non-stick frying pan over high heat. Stir-fry the ginger, spring onion, and noodles for about 5 minutes. Set aside in a large serving bowl.
  4. Add more oil if needed and stir-fry the water spinach, snow peas, and garlic for another 5 minutes. Place this mixture on top of the noodles.
  5. Add a little more oil to the pan and stir-fry the beef in batches (reserving the marinade) over the highest possible heat. Cook each side for approximately 2 minutes until just cooked through. Place the cooked beef directly on top of the vegetables.
  6. Once all the beef is cooked, reduce the heat and add the reserved marinade to the pan. Bring it to a simmer. Pour this sauce over the meat, vegetables, and noodles. Toss everything together and drizzle with sesame oil.
  7. Optionally, sprinkle sesame seeds on top before serving.
