- Preheat the bbq or grill to medium-high heat (about 400°F/200°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.
- In a bowl, mix the olive oil, minced garlic, dried oregano, and a pinch of salt pepper and the squid. Grill the squid for about 2-3 minutes per side, or until it's opaque and has grill marks. Remove from the grill and set aside.
- On the same grill, add the chorizo slices and zucchini slices. Grill them both for about 2-3 minutes per side until it's slightly crispy/tender and has grill marks.. Remove both from the grill and set aside.
- In a large serving bowll, whisk together the white wine vinegar, mustard, chilli, capers, parsley, oregano and the white beans, a pinch of salt, and a pinch of black pepper. Toss well.
- Top this with the grilled chorizo, zucchini slices, and char-grilled squid while all still warm.
- Tear the fresh mozzarella over the top and drizzle with lots of good extra virgin olive oil.
