  1. Preheat the bbq or grill to medium-high heat (about 400°F/200°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.
  2. In a bowl, mix the olive oil, minced garlic, dried oregano, and a pinch of salt pepper and the squid. Grill the squid for about 2-3 minutes per side, or until it's opaque and has grill marks. Remove from the grill and set aside.
  3. On the same grill, add the chorizo slices and zucchini slices. Grill them both for about 2-3 minutes per side until it's slightly crispy/tender and has grill marks.. Remove both from the grill and set aside.
  4. In a large serving bowll, whisk together the white wine vinegar, mustard, chilli, capers, parsley, oregano and the white beans, a pinch of salt, and a pinch of black pepper. Toss well.
  5. Top this with the grilled chorizo, zucchini slices, and char-grilled squid while all still warm.
  6. Tear the fresh mozzarella over the top and drizzle with lots of good extra virgin olive oil.
