Instructions
- In a mixing bowl, combine ground lamb, chopped onion, minced garlic, ground cumin, ground coriander, ground paprika, salt, and pepper.
- Mix everything together until well combined.
- Form the seasoned lamb mixture into small balls, place a ball into the centre of each taco and cover with cling film or baking paper, then pres flat with a rolling pin, saucepan lid or hands.
- Set aside until ready to grill.
- In a separate bowl, combine the chopped parsley, chopped mint, diced cucumber, diced tomatoes, and finely chopped red onion.
- Drizzle lemon juice and olive oil over the salad.
- Season with salt and pepper to taste.
- Toss everything together until well combined.
- Preheat your barbecue or grill to medium-high heat.
- Place the lamb kofta tacos on the barbecue with the meat side down.
- Grill for about 4-5 minutes until they start to develop grill marks and cook through.
- Flip and lightly toast the taco, you can add cheese if you like at this point!
- Now its as simple as topping with salad and as many or littel condiments as you like.
