Ingredients

Instructions

  1. In a mixing bowl, combine ground lamb, chopped onion, minced garlic, ground cumin, ground coriander, ground paprika, salt, and pepper.
  2. Mix everything together until well combined.
  3. Form the seasoned lamb mixture into small balls, place a ball into the centre of each taco and cover with cling film or baking paper, then pres flat with a rolling pin, saucepan lid or hands.
  4. Set aside until ready to grill.
  5. In a separate bowl, combine the chopped parsley, chopped mint, diced cucumber, diced tomatoes, and finely chopped red onion.
  6. Drizzle lemon juice and olive oil over the salad.
  7. Season with salt and pepper to taste.
  8. Toss everything together until well combined.
  9. Preheat your barbecue or grill to medium-high heat.
  10. Place the lamb kofta tacos on the barbecue with the meat side down.
  11. Grill for about 4-5 minutes until they start to develop grill marks and cook through.
  12. Flip and lightly toast the taco, you can add cheese if you like at this point!
  13. Now its as simple as topping with salad and as many or littel condiments as you like.
