  1. Heat the vegetable oil in a large skillet over medium-high heat. Add minced garlic,lemongrass, green onion and ginger, sauté for about 30 seconds until fragrant.
  2. Add the prawns to the skillet and stir-fry for about 2-3 minutes until they are heated through. Tossing alot.
  3. Add the coconut and sesame oil and toss again, remove from heat.
  4. In a bowl, whisk together chilli, brown sugar, lime juice and fish sauce
  5. In a large bowl combine the rice, fried shallots, tomatoes and prawns then cover with sauce and toss,
  6. Eat in lettuce cups with herbs.
  7. Easy flex the whole way.
